575 Cascada
This nano lot is a blend of Typica, Tabi & Bourbon from El Bocadillo farm run by Herbert Peñaloza Correa and his team at 575 Café based in Casabianca, Colombia. Herbert is the key person behind our long term partner La Real Expedición Botánica who we buy from in Colombia. We came to know Herbert through a mutual friend in 2018 and since then have been waiting for the opportunity to have his coffee and finally it's here.
This coffee is an interesting lot utilising an experimental processing method called Cascada. Basically processed as a Natural. Whole coffee cherries are fermented in a closed container in an anoxic environment. This container is placed in a moving water mass, a river, near a waterfall at the El Bocadillo farm. Hence the name Cascada that translates to Waterfall.
We found this coffee to be super aromatic. Quite fantastic really. Tasting incredibly rich, deep and sweet with notes of cherry, jammy fruits, brandy like aromatic deep fruit notes. Winey mouthfeel, great acidity, sweetness and good clarity.
